Indigo – One Year On

13 Nov 17

In 2016, Croydon was blessed with a brand new Indian eatery that quickly became a firm favourite amongst locals and Boxpark visitors from far and wide. We caught up with Indigo's head of Business Development, Sham Mahabir, to reflect on his first twelve months with Boxpark.

Hi Sham, how would you sum up your first year at Boxpark Croydon?

It would be almost impossible to summarise what an experience the past twelve months have been but, in one word, I would have to say it has been spectacular!

Have there been any particular stand-out moments for you in the last 12 months?

The number of very satisfied customers we serve daily, but also being rated so high on Trip Advisor as a new restaurant is definitely the best end to the year; we're currently at number 3!

For anyone yet to try your menu, what can customers expect from you at Boxpark Croydon?

An explosion of flavours and plenty of choice. You can try everything in one meal with one of our amazing bento boxes and mix it up with meat and vegetable dishes. We also serve a number of delicious sides and appetisers to get your taste buds tingling. We have also adapted our menu to fit the dietary requirements of our customers, making a number of dishes vegan and gluten free. Our service is also second to none.

What is your favourite item on your menu?

This changes fairly frequently but the Masala Dosa and Aubergine Alou tie for first place.

What is your favourite thing about Croydon?

It's been great to see how the borough is changing and evolving. There's a lot happening in Croydon and it's great for us to feel that we're part of that. It's also been wonderful meeting so many customers.

What was the last song you listened to?

Carly Simon - Nobody Does It Better (than Indigo, of course!).

Indigo is open 7 days a week at Boxpark Croydon and you can follow them online on Facebook, Twitter and Instagram.
