There is no doubt that one of the most positive and welcoming places to dine at Boxpark Croydon is the Caribbean cookhouse Fish Wings & Tings. Between quality food and a cheeky rum punch there's also the super-friendly and hospitable staff; always ready to offer a smile and great service. Amongst this dynamic team is Brian Danclair, the creator, chef and owner.

We sat down with Brian to find out more about his culinary journey to Fish Wings & Tings!

Tell us who you are and what you do.

I am Brian Danclair and I am the chef and owner of Fish Wings and Tings. I have two restaurants now. My first opened in Brixton, in 2012, and my second is right here at Boxpark Croydon.

Which song best sums up your brand?

Lord Kitchener - London is the Place for Me

What can customers expect from you at Boxpark Croydon?

You can expect a real honest, down-to-earth vibe with food that encompasses the entire Caribbean region. It's full of flavour and made with real heart. Food has always been my passion and I love bringing that to the people I meet every day. I can also make a mean rum punch!

What is your favourite item on your menu?

The Codfish Fritters are sure-fire winner! It's like getting a high five from Jesus himself.

Which other Boxpark Croydon trader would you recommend to customers?

All of them! Boxpark Croydon is full of great eateries. There's something for everyone and a fantastic atmosphere too.

What is your favourite thing about Croydon?

I love riding on the tram! It's such a convenient and connected way to move around.

If you were on death row, what would be your last meal and why?

My grandmother's Sunday roast. It was her incredible cooking that inspired me to get into the kitchen myself.
