This month we have a new menu joining the Boxpark family – hearty Filipino soul food restaurant, Kubo. We caught up with co-founder, Jigger, to find out more.

Tell us who you are and what you do.

We are a family of restauranteurs from the Philippines who have set out to promote Filipino cuisine to Western palates.  

What can customers expect from Kubo at Boxpark?

Tasty, authentic food from the Philippines, new, bold flavours; a real Filipino gastronomic experience. 

What song sums up your brand?

Home Cookin’ – Jr. Walker & The All Stars

What is your favourite item on your menu?

That depends on our mood. The adobo is just so comforting, as it is our national dish and reminds us of our grandmother’s kitchen. The sisig is sheer porky deliciousness though. 

Which other Boxpark Croydon trader would you recommend to customers?

So far we like Greek on the Street and Fish Lab the best. The wings from Coqfighter are excellent, too! 

What is your favourite thing about Croydon?

We love how so many cultures are represented; how it’s a bit quieter than Central London but at the same time very well connected to everywhere else. 

What was the last song you listened to?

You Never Can Tell – Chuck Berry
