Spotlight: Mud

15 Jan 17

MUD have been making big waves in the world of brunch since opening their first restaurant in Tooting. Now they're dishing up their exciting menu and big flavours at Boxpark Croydon and you guys can't seem to get enough. It's little wonder too, what with their delicious range of expertly prepared meals and freshly made coffees! We sat down with Director, Ian Owens, to find out what's in store at MUD and what his last meal would be...

Tell us who you are and what you do.

We’re MUD and we’re all about great coffee and brunch. We’re an informal place looking to create tasty, attractive dishes coupled with beautiful coffee in a laid-back, welcoming environment, seven days a week.

Which song best sums up your brand?

Tricky question! Let’s go with Coldplay – Paradise. When you’re hungover on the weekend, we like to think that we’re a place of paradise for you!

What can we expect from you at Boxpark Croydon?

You can expect lots of avocado, eggs and flat whites! We like to think that we’re pretty friendly and chilled out and we're at your service for everything from hangover food to the healthier stuff. We open up on weekdays at 7am to give commuters their caffeine hit, as they head to work, and we think that we’re the perfect place to catch up with your mates over the weekend. Check out our Instagram and Twitter to see what we’re all about!

What's your favourite item on your menu?

That's a tough one. It's got to be between the Eggs Benny with Pork Belly and Corn Fritters! Hmm, those Corn Fritters though (with smashed avocado, a poached egg, homemade chilli jam and bacon!) – they fly out over the weekend and are a firm favourite amongst our customers! A side dish of potato waffles topped with parmesan are also a must.

Which other Boxpark Croydon trader would you recommend to customers?

We’re big fans of the Wine & Deli guys - there’s nothing better than a glass of wine, some cheese and cured meat after a long day at work. The Coqfighter burgers are also unreal and definitely a guilty pleasure!

What is your favourite thing about Croydon?

As Croydon residents, we love and definitely feel part of the local community. The warm welcome that we have received has been awesome and we’ve really enjoyed getting to know our regular customers (and memorising their choice of coffee of course!).

If you were on death row, what would be your last meal and why?

It’s a tricky one, but I love simplicity. Give me a good steak and homemade chips any day. Either that or perfectly poached Clarence Court eggs on toast would make me a happy man.
